#CanadianBeef and Eggs – An Unbeatable Combo #recipe

I am a Canadian Beef blogger for the month!  Hooray!  This month’s theme is beef and eggs.  There are a lot of recipes out there for either beef or eggs and even a few that combine the two in a very visible way.  Steak and eggs, a truck stop classic, quickly comes to mind.  Here is another recipe from a bygone era.


Begin with your favourite meatloaf ingredients.  For me, this includes Canadian ground beef, bread crumbs, french fried onions, Worcestershire sauce, ketchup or BBQ sauce, two eggs, and some pepper.


Thoroughly combine all the ingredients and pack approximately 2/3 of the mixture into the bottom of a well-sprayed loaf pan.  Next, add hard boiled eggs neatly across the pan.  Finish by packing in the rest of the meatloaf mixture.  Bake at 350 F for 40-45 minutes or until cooked through.  Let rest 5-10 minutes before turning out onto serving platter.  If you wish to drain the loaf, turn it upside down, in the pan, onto a small cooling rack (the rack that comes with a toaster oven is just about perfect) before setting it onto a final presentation platter.


It makes a beautiful (and surprising) presentation.  Originally, the eggs were used to ‘stretch’ ground beef in lean financial times.  While it still accomplishes the same thing today, it also just looks darn cool.

    I’ve never gad an egg over my meatloaf before, but am willing to give it a try!

    I didn’t realize this was a Canadian meat loaf. My dad always liked to do this and he grew up poor. I just thought he was being creative. Thanks for bringing back memories.
